For Your Darkest Cocoa Needs
Choclatique Black Onyx is an intensely black, ultra Dutch-processed cocoa powder that has been alkalized to the extreme, resulting in a dark, jet black cocoa. When used in baking it produces an impressive black-as-coal colored appearance.
Black Onyx has less fat, and thus tends to create a drier finished product. We strongly recommend using a 50/50 mixture of Choclatique Black Onyx and Choclatique Red Cocoa and to add a little more shortening. If you want to use 100% Choclatique Black Onyx, be sure to increase the shortening in the recipe to alleviate the dryness.

First, this is WONDERFUL chocolate. It just came today & I have already used it in 2 things! It's rich, it's smooth, it's everything a good cocoa powder oughtta be. I will likely end up buying more of this. I'm anxious to try the other varieties of cocoa powder. The shipping was also very fast, and it showed up here quickly.
