Peanut Butter Fudge With Chocolate Ganache

I'm Ed Engoron from Choclatique and I am The Chocolate Doctor. Do you hate the grainy fudge you get at county fairs? Well, I certainly do but now I've got a better than perfect recipe to turn out absolutely beautiful smooth chocolate fudge every single time. Okay, here's what we need to do. We're going to start with chocolate ganache because all recipes go better with chocolate ganache. This is one cup of dark chocolate ganache and then we're going to get two cups of evaporated milk. Evaporated milk adds a little sweetness and a little more body than regular milk and we're going to add six ounces of marshmallows. I know it looks more than that but this is only six ounces, one cup of peanut butter chips, out of the bag, one cup of dark chocolate chips out of the bag, a teaspoon and a quarter of vanilla and just a smidgen of salt. You're going to take that and mix it and then we're going to cook it for about ten minutes on the range. After about ten minutes the fudge looks just like this, it's nice and smooth but we want it to be even smoother so we add one more step by taking our hand mixer and mixing, actually whipping the fudge into a frenzy so that it's nice and smooth, adds a little bit of air which makes it even smoother after it comes out of the cooling process. You want to do this for about five minutes. At the end of five minutes, we'll shut this off. Now we've got a prepared pan over here with aluminum foil and I like to use aluminum foil, leave a couple of ears on the aluminum foil coming off to the side that will make it easier for us to pull the fudge out after it's cured and we're going to pour it in and then we're going to chill it and cure it for overnight. In the morning you'll have an absolutely wonderful fudge so allow yourself enough time to make it perfect every single time. I'm Ed Engoron from Choclatique. I am The Chocolate Doctor.
