I'm Ed Engoron from Choclatique. I am The Chocolate Doctor. Today we're going to be making one of the most marvelous ingredients it's called chocolate ganache. Now a lot of people take credit for making chocolate ganache the first time, the Spanish, the Swiss and of course the French but who really cares. It's made out of chocolate and it's wonderful and you can enjoy it anytime with anything that you want to make. So the first thing that we're going to do today is make a gluten-free dark chocolate ganache and it's absolutely fantastic, I promise. So the first thing that you're going to do is you're going to take water, a little bit of corn syrup, cocoa, it's unsweetened natural cocoa, not the alkalized cocoa and just a touch of salt. By the way one of the ingredients that's absolutely perfect with cocoa and chocolate all the time is salt. You're going to mix that up just enough to rehydrate the cocoa powder that's in there and then you're going to put it on the stove for just a few minutes. After it's nice and hot the next thing you do is take it and pour it over your chocolate. Now the residual heat is enough to melt the chocolate and you're just going to give it a stir, just look at it, I wish we had smellovision, you wouldn't believe the aroma that's hatching right over here right now and it usually takes about ten, fifteen minutes for it to fully emulsify and begin to set up completely. Now the next thing that you want to add and this is my secret ingredient it's called Star K chocolate extract and this is an all natural chocolate extract that gives it that extra punch every single time. As you can see just after a few minutes, it starts to get very dark luscious, unctious and very very silky. Dairy-free ganache. I'm Ed Engoron. I am the chocolate doctor.
