How to Make Ganache to Cover Strawberries

I'm Ed Engoron from Choclatique. I am "The Chocolate Doctor." Do you love strawberries as much as I do? Well, I love California strawberries. And, by the way, in California strawberries are always in season. Now, there's only one thing better than fresh strawberries, and that's fresh chocolate ganache dipped strawberries. And, by the way, it's as simple as, you know, saying "One, two, three." Pick up the strawberry, lightly dip it in the chocolate, give it a little bit of a twirl, and put it right over here on some parchment. I know you need an instant replay on that, so let me show it to you one more time. California strawberry, Choclatique chocolate, dip it in the ganache, and you have a wonderful strawberry. Now, if that isn't fancy enough for you, we can make it even fancier by taking a little white chocolate and doing just a light drizzle over the dark chocolate. I kind of like the light, the dark together. If that isn't fancy enough for you, we're going to take our California strawberries that have been dipped in white, and we're going to create tuxedo strawberries. We do that by a half a dip on one side, half a dip on another, creating the V of the tuxedo. Again, half a dip on one side, half a dip on the other, creating a tuxedo. And then, just to finish it off, let's put a couple of buttons right down the middle. One, two. One, two. And, that's it, California chocolate dipped strawberries. I'm Ed Engoron from Choclatique. I am "The Chocolate Doctor." Take two truffles, and call me in the morning.
