I'm Ed Engoron from Choclatique, and I am the chocolate doctor. Today, we're going to make hand dipped chocolate truffles. You're going to need a couple of implements to get started. You're going to need a scoop so you can scoop the chocolate ganache from the bowl. And you're going to need an assortment of different dipping forks so you can dip it into the chocolate, get it out, and even possibly put a little decoration on the top. OK let's get started. First scoop out the ganache. Nice big helping of ganache. You know truffles came from France and they're called truffles because they kind of look like truffles, the mushroom type. OK. Then we're ready to dip. So I'm going to use this fork and I'm going to just dip it into tempered chocolate. Then I'm going to turn it. Look at that, isn't that gorgeous. Then I'm just going to set them right down over here. I'm going to do a second one before I start decorating. Again you're going to roll it in your hand. Now some people have hot hands. If you have hot hands, put on a pair of gloves, dip the gloves into ice water before you start rolling and you won't melt the chocolate in your hand. I don't have hot hands. There's ice water that runs through my veins. OK. There we go. And then you can just take one of the forks and do a little pattern on the top. Now is that easy enough to do? And you will blow away all of your guests when you do this for a wonderful dinner. I'm Ed Engoron from Choclatique. I am the chocolate doctor. Take two truffles and call me in the morning.
